Study after study shows overwhelming evidence that eating more fruits, vegetables and whole grains improves your energy, health and longevity. At the same time, meat-consumption is taking the rap for a whole host of health problems.

For many people the first step is what's
called "semi-vegetarian".

Calcium and the Dairy-Free Diet

Many people are reluctant to adopt a Vegan or otherwise dairy-free diet for fear that their diet will be deficient in calcium. In fact, the current rage for large doses of calcium is based on a misunderstanding of how the body uses it.

One of the things calcium does is neutralize the acid created by eating animal protein. When acidic foods such as meat are eaten, the body tries to return to its alkaline state by taking the calcium it doesn’t get from food out of the bone.

The currently popular recommendations for 1,000 mg of calcium a day is based on the typical American diet that contains as much as four times the protein needed. When that unnecessary protein is eliminated from the diet, as in the Vegan diet, the calcium requirements are much lower.

With a lower requirement for calcium, leafy, green vegetables—which are inherently high in calcium as well as iron, magnesium, vitamin C and many of the B vitamins—are an excellent source.

Also high in calcium are snap beans, broccoli, figs and molasses. Tofu, of course, is one of the best sources of both calcium and protein.

An estimated 5.7 million Americans consider themselves vegetarians.

However, over 14 million people consider themselves “semi-vegetarian”. Semi-vegetarian is defined as occasionally eating fish, chicken or meat but preparing fruit- and vegetable-based entrées for most meals.

It could be that people are trying vegetarian recipes a few times a week to personally verify the many success stories of increased energy, weight control and better health.
