In a nutshell—peanuts are a nutritional powerhouse!
A ground-breaking study published by in the American Journal of Clinical Nutrition found that diets high in “good” mono-unsaturated fat (MUFA)—that fat found in peanuts—improve several risk factors for heart disease including LDL cholesterol and triglycerides.
Low fat diets designed to reduce the intake of saturated fats (from animal and full-fat dairy products) do, in fact, reduce “bad” LDL cholesterol, but also reduce the “good” HDL cholesterol which the body uses to carry the LDL cholesterol away.
What’s great about adding peanuts to the diet is that they also lower triglycerides—an emerging risk factor for heart disease. And the best part is that peanuts also contain all of these heart-healthy nutrients: Vitamin E, folic acid, soluble fiber, arginine, plant sterols, copper, zinc, selenium and magnesium. In other words, go nuts!

Peanut/Cashew Butter
24 ounces (720 mL) roasted peanuts or cashews
Variation: Almond Butter
Substitute:
Roasted Almonds.
Add 1/2 cup (120 mL) oil if necessary, refrigerate and pour off excess oil next day.
Speed: Variable to High
Time: 1 minute (see Caution)
Yield: 1 1/4 cups (300 mL)

Directions:
Pour nuts into Vita-Mix container. Secure 2-part lid.
Select VARIABLE, speed #1. Insert tamper through lid opening. Turn on machine and quickly increase speed to #10; then to HIGH. Use the tamper to push the nuts into the blades.
In 1 minute you will hear a high pitched chugging sound.
Once the butter begins to flow freely through the blades
the motor sound will change from a high pitch to a low
laboring sound. Stop and pour into container.
Note: Refrigerate in airtight container.
CAUTION: Over processing will cause serious overheating
to your machine! Do not process for more than 1 minute after
mixture starts circulating freely. |

Harvard University’s ongoing study of 86,000 female nurses found that women who ate 2-4 ounces of peanuts a week cut their risk of heart disease in half over those who rarely ate peanuts.
Interestingly, the same study showed that women who ate commercially-processed peanut butter instead of peanuts did not realize the same health benefit.
