Place all the ingredients in the CIA Professional Series container in order listed and secure the lid. Select VARIABLE 1. Turn on machine and quickly increase speed to VARIABLE 4. Blend for 20 seconds.

 
  yield: 2 cups / 480 ml (8 servings)


Notes: The batter should have a consistency slightly thiner than whipping cream. You can add more ice and /or flour to thin/thicken the batter as necessary. The secret is to keep the batter cold.

Serving Ideas: This batter makes perfecly light onion rings, Japanese-style fried zucchini, carrots and sweet potatoes or shrimp. Try frying softshell crabs in this light batter.
