1/2 pound / 230 g chestnuts, roasted, shells removed
4 cups / 960 ml chicken broth
1 cup / 240 ml heavy whipping cream
1 teaspoon sea salt
pinch freshly ground black pepper

Cut an “X” on the bottom of the chestnuts and roast at 350 degrees F / 175 degrees C for 15 minutes. Remove shell.  

 

2 Place the broth and chestnuts in a large saucepan and simmer for one hour or until the chestnuts become soft. Add the rest of the ingredients and bring to a boil. Remove from heat.
3 Carefully pour the mixture in the Professional Series and secure the lid. Select VARIABLE 1.
4 Turn on machine and quickly increase speed to VARIABLE 10. Puree for 30 seconds or until smooth. You may add more water or broth if needed. Taste for seasoning and serve.
