1 cucumber peeled & cut into pieces
1 1/4 pounds tomatoes quartered
1 small onion quartered
1 sweet green bell pepper, seeded
3 cups tomato juice, fresh or canned
3 tablespoons fresh cilantro
2 tablespoons fresh lime juice
1 teaspoon chipotle chilies in adobo sauce
1/4 cup red wine vinegar

Place all ingredients in the Professional Series container in order listed. Secure 2-part lid. Select Variable, speed 1

Turn on machine and quickly increase speed to 10; then to High.

Run for 1 minute. Serve or chill in refrigerator 2 hours to enhance flavors. Sprinkle with reserved garnish.
Garnish
:
1/2 avocado peeled, finely chopped
1 green onion, finely chopped
1/2 cup plum tomatoes, finely chopped
1/2 cup jicama, peeled and finely chopped
fat free sour cream (optional).
