Place the candied ginger in the Professional Series container and
secure the lid. Select VARIABLE 3. Turn on machine and quickly increase speed to VARIABLE 10. Chop for 10 seconds or until the ginger is finely ground.
 
  2     Remove the lid plug and add the mayonnaise and water. Replace the lid plug. Blend for an additional 10 seconds or until smooth.
   
yield: 3 cups / 720 g (24 servings)
