Cheese-Filled Crêpes with Blueberry Coulis

Ingredients

  • 2 cups (250 g) all-purpose flour
  • 6 Tablespoons (75 g) granulated sugar, divided use
  • 1/2 teaspoon salt
  • 3 large eggs, divided use
  • 2 cups (480 ml) whole or low-fat milk
  • 2 Tablespoons (28 g) unsalted butter, melted
  • 1 teaspoon vanilla extract, divided use
  • Melted unsalted butter for greasing and drizzling
  • 1 3/4 cups (396 g) cottage cheese
  • 4 ounces (114 g) cream cheese
  • Blueberry Coulis (See Recipe)

Directions

  1. To make the crêpe batter, sift the flour, 4 Tablespoons sugar, and salt into a bowl and set aside.
  2. Place 2 eggs, milk, butter, and 1/2 teaspoon vanilla extract into the Vitamix container in the order listed and secure lid.
  3. Select Variable 1.
  4. Turn machine on and slowly increase speed to Variable 10 and blend for 10 seconds, or until smooth.
  5. Stop machine and remove lid.
  6. Add dry ingredients to the blended mixture and secure lid.
  7. Select Variable 1.
  8. Turn machine on and slowly increase to Variable 10 and blend for 10 seconds, or until ingredients are blended into a relatively smooth batter.
  9. Remove mixture to a bowl and let the batter rest for 30 minutes in the refrigerator. (The batter may be prepared to this point and stored in the refrigerator for up to 12 hours.)
  10. Heat a crêpe pan or small skillet over medium heat.
  11. Pour a scant cup batter into the crêpe pan, swirling and tilting the pan to coat the bottom.
  12. Cook, reducing the heat if necessary, until the first side is set and has a little color, about 2 minutes.
  13. Use a thin metal or heatproof rubber spatula to loosen the crêpe, and turn it over. Cook on the other side until set and very lightly colored (the crêpe will not be as dark on the second side as on the first), 1 minute more.
  14. Stack the crêpes between layers of parchment or waxed paper as you cook.
  15. To make the cheese filling, place the cottage cheese and cream cheese into the Vitamix container and secure lid.
  16. Select Variable 1.
  17. Turn machine on and slowly increase to Variable 10, then to High.
  18. Blend for 10 seconds, or until very smooth. Stop machine and remove lid.
  19. Add remaining sugar, egg, and vanilla extract to the Vitamix container and secure lid.
  20. Select Variable 1.
  21. Turn machine on and slowly increase speed to Variable 10, then to High.
  22. Blend for 20 seconds or until well combined. Keep refrigerated until you are ready to finish the crêpes
  23. Preheat the oven to 400°F (200°C). Lightly brush a medium baking dish with melted butter.
  24. Spoon or pipe about 2 tablespoons (30 g) of the cheese filling onto each crêpe. Fold each crêpe into quarters, or fold the sides in to the center, then roll each crêpe up. Place the crêpes seam side down in the prepared baking dish. Drizzle with melted butter and bake until very hot, 8–10 minutes.
  25. Serve immediately, 2 crêpes per serving, with warm Blueberry Coulis (see recipe).

This recipe has been written for the Vitamix 5200 with Standard 64-ounce container. If you are using a different Vitamix machine or container size, you may need to make adjustments to the Variable Speed, processing time, and/or ingredient quantities.
