Pomegranate Poached Pears with Chocolate and Raspberry Sauces

Ingredients

  • 6 medium pears
  • 2 cups (480 ml) pomegranate juice
  • 1 whole cinnamon stick
  • 6 whole cloves
  • 2 Tablespoons (11 g) Goji berries
  • For the Raspberry Sauce:
  • 1 (10 ounce) bag, (284 g) frozen red raspberries, thawed
  • For the Chocolate Sauce:
  • 1 1/2 cups (360 ml) soy, hemp or almond milk
  • 1/2 teaspoon vanilla extract
  • 1 cup (160 g) pitted dates
  • 2/3 (89 g) raw macadamia nuts
  • 1 Tablespoon unsweetened natural, non-alkalized cocoa powder, or more for a darker, stronger sauce
  • 1 teaspoon turmeric (to adjust color)
  • 1 cup (140 g) frozen blueberries

Directions

  1. Peel the pears, leaving stems intact, and slice a little off the bottom of each pear so that they stand up.
  2. In a large sauce pan, place pears standing up snugly together.
  3. Pour in pomegranate juice or wine.
  4. Add cinnamon, cloves, and Goji berries.
  5. Gently simmer, covered, for about 20 minutes until pears are tender.
  6. Remove pears and refrigerate until ready to serve.
  7. Reduce poaching liquid until it thickens and becomes syrupy. Remove from heat.
  8. For the raspberry sauce, place raspberries into the Vitamix container and secure lid.
  9. Select Variable 1.
  10. Turn machine on and slowly increase speed to Variable 10, then to High.
  11. Blend for 45 seconds or until very smooth.
  12. Mix into poaching liquid.
  13. For the chocolate sauce, place soy milk, vanilla, dates, macadamia nuts, cocoa powder, turmeric, and blueberries into the Vitamix container and secure lid.
  14. Select Variable 1.
  15. Turn machine on and slowly increase speed to Variable 10, then to High.
  16. Blend for 30 seconds or until very smooth and creamy. Add more soy milk if needed.
  17. Place a generous dollop of chocolate sauce on a dessert plate. Place a pear in the center of the chocolate and drizzle with raspberry sauce.

This recipe has been written for the Vitamix 5200 with Standard 64-ounce container. If you are using a different Vitamix machine or container size, you may need to make adjustments to the Variable Speed, processing time, and/or ingredient quantities.
