Acorn Squash Soup
Maple syrup, nutmeg and ground cinnamon add holiday flavor to this classic autumn soup. Garnish with roasted pumpkin seeds for even more holiday zest.
- 2 cups (480 ml) chicken broth
- 1/2 cup (120 ml) low fat evaporated milk
- 1/2 medium acorn squash, cooked, peeled, seeded
- 1 teaspoon maple syrup
- pinch of nutmeg
- 1/4 teaspoon ground cinnamon
- Salt and pepper, to taste
- Place all ingredients into the Vitamix container in the order listed and secure lid.
- Select Variable 1.
- Turn machine on and slowly increase speed to Variable 10, then to High.
- Blend for 4-5 minutes or until heavy steam escapes from the vented lid.
This recipe has been written for the C-Series and G-Series machines with Variable Speed control and 64-ounce container. If you are using a different Vitamix machine or container size, you may need to make adjustments to the Variable Speed, processing time, and/or ingredient quantities.

Rated 3 out of 5 by janice63 from Vitamix Squash Soup Medley Becomes Pumpkin Soup Because I combined two Vitamix recipes I didn't want to rate this particular Acorn Squash Soup highly. I don't care for sweet soup but wanted to use freshly baked pumpkin to make an easy soup. I used the 2 cups chicken broth, canned milk, and 1 cup mashed pumpkin in place of the acorn squash from this recipe. But I took the seasonings from the Pumpkin Soup recipe on this website: onions, garlic, brown sugar, paprika, and nutmeg in the same amounts called for in that recipe. It was very simple and we enjoyed it. I will make this combined recipe again. If a person prefers a more distinct pumpkin flavor more pumpkin could certainly be added.

I did substitute the milk for original unsweetened almond milk, otherwise the ingredients stayed the same. I would love to try this with a vegetable or mushroom broth to keep it vegetarian. I found that the acorn squash was naturally sweet, so I would not add any more maple syrup than what was called for.

Rated 5 out of 5 by Michelle P from Amazing soup I tried a neighbors Vitamix just to try out before I bought it. This soup was good the first time around but yet a little to thin. I added a whole acorn squash instead of half and added pumpkin spice instead of just cinnamon. Turned out awesome!

Can I double the recipe? I have the 750 Vitamix with the soup function. Also, do I need to use the variable speed or can I just select the soup function?
Yes you can double this recipe, you can also use the soup setting. It may need to be heated on the stove top once the blend is finished since you are doing a larger batch, it will take more time to heat up.

Why remove the seeds? Aren't they healthy? Why not just blend them in.
The seeds will not taste good, they will make your soup have an earthy/bitter flavor if you blend them into this recipe.

I have a TurboBlend Two Speed Blender, can I still use the soup recipes on High speed or is that bad for the motor?
Please use the high setting when making soups. You will start your machine on low but switch to high within about 10 seconds of turning the machine on.

You can just roast the acorn ahead of time in the oven.

Our soup program can get the soup to 165-170 degrees in the 5:35 seconds.

What about this takes an hour ? I'm confused And can I use almond milk ?
This takes into the cooking time of the squash. Yes you may use almond milk.
