Cream of Asparagus Soup
The vibrant green color of this asparagus purée makes it as beautiful as it is delicious.

Rated 5 out of 5 by Ginette from Great flavour! I steamed the asparagus in a little chicken broth and threw everything in the blender and added the cream at the end as the recipe indicated. We loved it.

Rated 5 out of 5 by gge4ever from Great recipe! This was the first soup that I made in my Vitamix and it was fantastic. I really liked the fact that it was so easy and had so few ingredients, yet the taste was wonderful.

Rated 5 out of 5 by CaptCupcake from So easy and so much flavor! This is a great quick dinner recipe. We made two batches of this soup in under 10 minutes. It's so fresh tasting! We only had lactose-free 2% milk on hand, so I added a wee bit of coconut butter for some richness. It's so good!! I think you have to like how asparagus tastes without a ton of salt and other things, or you might find it bland like the other reviewer. But, if you're into simple, healthy food, this recipe is awesome.

Rated 2 out of 5 by rumbamel from Lacks flavor. This is my third time trying a soup in the vitamix and all 3 times they lacked flavor. I was able to tolerate the taste of this one with some cheese, but my poor family was adding all sorts of things to make it better. The family suggested to not blend everything to death.

Rated 4 out of 5 by Brighteyes from Easy, quick, and delicious This was the first thing I ever made in my Vitamix Pro 750 and I was thrilled. Because I like to season most things, I added some minced onion and a teaspoon of bouquet garni for additional flavor. It was delicious!

Rated 5 out of 5 by anazing from Great addition to me kitchen... I bought this because I cannot swallow and a 'blender' foes not blend fine enough...the ease of use and recipes are great.

Add more steamed broccoli or asparagus?
This was in response to the first question where the Vitamix user asked about a broccoli soup and not an asparagus soup.
Date published: 2016-04-01
I made broccoli soup in my Vita Mix and although the flavor was good, the "mouth feel" was not good! It was too foamy! I turned the machine on, slowly increased the variable speed and then turned it on High for the remainder of the "cooking" time.
To create a thicker creamier soup add more steamed broccoli to create the better mouth feel. You may add a tablespoon or two of flaxseed to help decrease foam.
