Curried Carrot Soup
- 6 (366 g) medium carrots, cut in large pieces
- 1 (70 g) small onion, chopped
- 2 cups (480 ml) vegetable broth
- 1/2 cup (120 ml) plain soy milk
- 3/4 teaspoon curry powder
- 1/8 lemon, peeled
- 1/2 teaspoon salt
- Ground black pepper, to taste
- Place all ingredients into the Vitamix container in the order listed and secure lid.
- Select Variable 1.
- Turn machine on and slowly increase speed to Variable 10, then to High.
- Blend for 6 minutes or until steam escapes through lid. Serve immediately.
For recipe variation, use 2%, skim or low fat milk instead of soy milk.
This recipe has been written for the C-Series machines with Variable Speed control and Standard 64-ounce container. If you are using a different Vitamix machine or container size, you may need to make adjustments to the Variable Speed, processing time, and/or ingredient quantities.

Rated 4 out of 5 by ggloff from Nice soup! This is my first soup recipe with my new Vitamix! I loved it. I used extra curry based on the last commit but I don't think I needed it. I used carrots from my garden that were very sweet. I will make this again. Super easy!

Why does this recipe say "or until steam escapes'? I don't see where it says to heat anything.
The Vitamix heats by friction. So by blending for the time suggested the soup is being heated and will start to steam.

Can you use the soup program with this recipe?
Yes any of our soup recipes that call for blending to heat the soup can use the soup program

Why does raw vegetable soup become foamy by the time it is steaming
Do to the high speed of the blades some of the tricks you can do to reduce the foam is to add 1-2 tablespoons of flax seed to the soup and that should reduce the foam.
