Fresh Tomato Sauce

The Vitamix chops and purees fresh tomatoes and herbs into a classic Italian sauce.


  • 6 medium Roma tomatoes, quartered or 4 cups (665 g, 23.5 oz) chopped
  • 1 small onion, peeled, halved or about 1/3 cup (48 g, 1.7 oz) chopped
  • 1 small carrot, halved or about 1/3 cup (51 g, 1.8 oz) chopped
  • 2 Tablespoons tomato paste
  • 1 garlic clove, peeled
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon fresh lemon juice
  • 1/2 teaspoon brown sugar
  • 1/4 teaspoon salt


  1. Place all ingredients into the Vitamix container in the order listed and secure lid.
  2. Select Variable 1.
  3. Turn machine on and slowly increase speed to Variable 10, then to High.
  4. Blend for 1 minute, using the tamper to press the ingredients into the blades.
  5. Pour into a saucepan. Simmer for 35-40 minutes. Serve over pasta.

This recipe has been written for the C-Series machines with Variable Speed control and Standard 64-ounce container. If you are using a different Vitamix machine or container size, you may need to make adjustments to the Variable Speed, processing time, and/or ingredient quantities.
