Garden Pea Soup

A silky blend of potato and onion lends itself to the flavor of sweet peas in this savory soup.


  • 2 3/4 cups (660 ml) chicken or vegetable broth
  • 1/2 russet potato, 4 1/2 ounces (128 g)
  • 2 cups (270 g) frozen sweet peas, slightly thawed
  • 1 Tablespoon chopped shallot or onioin
  • 1/4-inch (.6 cm) x 1/4-inch (.6 cm) strip lemon peel
  • 1/8 teaspoon kosher salt


  1. Place all ingredients into the Vitamix container in the order listed and secure lid.
  2. Select Variable 1.
  3. Turn machine on and slowly increase speed to Variable 10, then to High.
  4. Blend for 6 minutes or until smooth.

This recipe has been written for the C-Series machines with Variable Speed control and Standard 64-ounce container. If you are using a different Vitamix machine or container size, you may need to make adjustments to the Variable Speed, processing time, and/or ingredient quantities.
