Goat Cheese and Blackberry Popsicles

The combination of goat cheese and blackberries makes this popsicle recipe worthy of a spot on a restaurant menu.

Ingredients

  • 1 cup (115 g) goat cheese
  • 1 cup (240 ml) plain Greek yogurt
  • 2 Tablespoons honey, or sugar
  • 1 cup (140 g) blackberries
  • 1 cup (480 g) vanilla yogurt

Directions

  1. Place goat cheese, Greek yogurt, and honey into the Vitamix container in the order listed and secure lid.
  2. Select Variable 1.
  3. Turn machine on and slowly increase speed to Variable 10, then to High.
  4. Blend for 30 seconds, using the tamper to press the ingredients into the blades.
  5. Place blackberries and vanilla yogurt into the Vitamix container in the order listed and secure lid.
  6. Select Variable 1.
  7. Turn machine on and slowly increase speed to Variable 10, then to High.
  8. Blend for 1 minute.
  9. To assemble, pour goat cheese mixture into the Popsicle molds.
  10. Pour blackberry mixture on top of goat cheese mixture and freeze.

Notes

If you do not have Popsicle molds, you can use small, disposable cups. Adding more sugars or alcohol to your Popsicles will inhibit the freezing process. When trying to recreate your favorite Popsicle, understanding how ingredients freeze is critical. Using full-fat dairy ingredients produces a creamier result, but you can also use nondairy milks and yogurt. Popsicles that are mostly fruit will have a very hard, icy texture.
