Herbed Apple Granita

Fresh tarragon adds a peppery note to this sweet, refreshing dessert.


  • 3 cups (720 ml) apple juice
  • 4 teaspoons fresh lemon juice
  • 1/2 cup (100 g) granulated sugar
  • 1/2 cup (48 g) fresh tarragon or mint leaves


  1. Place all ingredients into the Vitamix container in the order listed and secure lid.
  2. Select Variable 1.
  3. Turn machine on and slowly increase speed to Variable 10.
  4. Blend for 20 to 30 seconds.
  5. Pour into two standard ice cube trays and freeze until solid, about 4 hours. Let trays thaw at room temperature for 10 minutes.
  6. Place half of the ice cubes into the Vitamix container and secure lid.
  7. Select Variable 1.
  8. Turn machine on and slowly increase speed to Variable 10, then to High.
  9. Blend for 20 to 30 seconds, using the tamper to press the ingredients into the blades. As mixture begins to freeze, the sound of the motor will change and the mixture will start to flow through the blades. Toward the end of processing, leave the tamper in to encourage formation of four mounds.
  10. Serve immediately.
  11. Blend remaining half of ice cubes and serve.

This recipe has been written for the C-Series and G-Series machines with Variable Speed control and 64-ounce container. If you are using a different Vitamix machine or container size, you may need to make adjustments to the Variable Speed, processing time, and/or ingredient quantities.
