Peach Bellini

A smooth, peach purée is the base for this festive, Italian champagne cocktail.


  • 1/2 cup (120 ml) water
  • 1 Tablespoon lemon juice
  • 6 Tablespoons (75 g) granulated sugar
  • 1 pound (455 g) peaches, fresh or frozen, thawed
  • Champagne, chilled


  1. To make the peach purée, place water, lemon juice, sugar, and peaches into the Vitamix container in the order listed and secure lid.
  2. Select Variable 1.
  3. Turn machine on and slowly increase speed to Variable 10, then to High.
  4. Blend for 1 minute.
  5. Place 1 tablespoon of peach purée in the bottom of a champagne flute and fill with champagne.
  6. Stir lightly to combine.

This recipe has been written for the C-Series machines with Variable Speed control and Standard 64-ounce container. If you are using a different Vitamix machine or container size, you may need to make adjustments to the Variable Speed, processing time, and/or ingredient quantities.
