A drinkable vacation with the sweet flavors of pineapple and rum—drink umbrella not included!
- 1 ounce (30 ml) light rum
- 1 ounce (30 ml) cream of coconut
- 1/4 cup (40 g) fresh pineapple chunks
- 1/2 cup (120 ml) milk
- 1/2 cup (120 ml) ice cubes
- Place all ingredients into the Vitamix container in the order listed and secure lid.
- Select Variable 1.
- Turn machine on and slowly increase speed to Variable 10, then to High.
- Blend for 30 seconds or until desired consistency is reached.
This recipe has been written for the C-Series machines with Variable Speed control and Standard 64-ounce container. If you are using a different Vitamix machine or container size, you may need to make adjustments to the Variable Speed, processing time, and/or ingredient quantities.
The recipe says milk, but I'm assuming that's coconut milk, no? I've never seen regular milk in a pina colada recipe. Please clarify.
You can use either. Since we are using the cream of coconut in this recipe you can any kind of milk and still get the coconut flavor.

Here is a peach sorbet; 2 to 3 fresh peaches, pitted ½ tsp vanilla extract 1 cup sugar or other sweetener, to taste 4 cups ice cubes Place all ingredients in the container in the order listed. Secure 2-part lid. Select VARIABLE speed #1; quickly increase to #10, then HIGH. In about 30 to 60 seconds, the sound of the motor will change and four mounds should form in the mixture.
