With just a few simple ingredients, this tangy vinaigrette from Chef Ron DeSantis adds garden-fresh flavour to your bed of greens.
- 1 Tablespoon white vinegar
- 3 Tablespoons rapeseed oil
- ½ teaspoon honey
- ⅛ teaspoon salt
- pinch of ground black pepper
- 1 teaspoon chopped onion
- ½ Roma tomato, halved
- Place all ingredients into the Vitamix container in the order listed and secure the lid.
- Select Variable 1, start the machine, and slowly increase to Variable 5. Blend for 30 seconds.

Rated 4 out of 5 by Camie from Really close to five star Mostly, I love this creamy, silky vinaigrette. My one issue is a lack of flavor. My husband, without my asking, said the same thing to me. In looking at other tomato vinaigrette recipes, the other things that the highly praised recipes add to the mix is a tablespoon of Dijon mustard, and 1/4 cup of apple cider vinegar (or red wine vinegar). I think that would do it and then this would be a fabulous recipe.

Rated 5 out of 5 by jammy from Delish! I think I accidentally got a bit more vinegar in than than called for, and didn't have onions in the house, so I subbed onion powder. My proportion of tomato may also have been a bit higher. I used beefsteak, not Roma. I thought it was so yummy!
