Vitamix Granola Bars
These sweet and crunchy whole-grain bars are a great make-ahead snack that you can take on the go, or pack in kids' lunches.
Ingredients
- wheat berries, or ½ cup (60 g) whole wheat flour
- 28 g (¼ cup) wheat germ
- 70 g (½ cup) raw almonds
- 80 g (1 cup) rolled oats
- 1 apple, seeded, cored, quartered
- ¼ teaspoon salt
- 1 teaspoon ground cinnamon
- 1 teaspoon vanilla essence
- 45 ml (3 Tablespoons) honey, or agave nectar
- 50 g (½ cup) dried cranberries
Directions
- Place wheat berries, wheat germ, almonds, and oats into the Vitamix Dry Grains container and secure lid.
- Select Variable 1.
- Turn machine on and slowly increase to speed to Variable 10, then to High.
- Blend for 30 seconds. Turn machine off. Pour out into bowl.
- Place apple into the Vitamix Dry Grains container and secure lid.
- Select Variable 1.
- Turn machine on and slowly increase speed to Variable 10, then to High.
- Use the tamper to press the apple into the blades.
- Blend for 35-40 seconds or until consistency of applesauce.
- Pour into bowl with dry ingredients. Add salt, cinnamon, vanilla, honey, and cranberries to mixture.
- Mix gently by hand to combine. Spread into greased 8-inch x 8-inch (20cm x 20cm) pan.
- Bake for 25 minutes in a 350˚F (180˚C) oven.
Notes
If using wheat berries, blend for 45-60 seconds in step 4.

Grind the oats!!???!!!
Love my Vitamix overall!
This recipe is strange! I was halfway through Step 2 when I thought I must be making a mistake . . .. are you really supposed to grind the oats into a flour?
Resulting bar is ok but kind of gummy.
Next time I will try grinding only half the oats or grinding the wheat berries and maybe wheat germ first, then adding almonds and oats a bit later for more texture. Not sure if that throws off the recipe or not.
If you are supposed to grind the oats fully, I would call this a "Breakfast Bar" not a "Granola Bar." I think we expect more texture in a Granola Bar!
