Chocolate “Figgy” Pudding with Fig Jam and Toasted Pistachios

A modern take on the dessert that dates back to 16th century England, this chilled treat is the perfect ending to a holiday meal. Prepare this recipe in advance so you can enjoy more quality time with your guests.

Ingredients

  • 180 ml (¾ cup) milk, lukewarm
  • 480 ml (2 cups) thickened cream, lukewarm
  • 50 g (¼ cup) caster sugar
  • 240 ml (1 cup) milk chocolate chips
  • ½ teaspoon Winter Spice Seasoning
  • 1¼ teaspoon powdered gelatin
  • 190 ml (⅔ cup) Fig Jam
  • pistachios, lightly toasted and chopped

Directions

  1. Add all ingredients into the Vitamix container in the order listed and secure the lid.
  2. Select Variable 1 or the Hot Soup program (if available). Start the machine, slowly increase to its highest speed, and blend for 5 minutes 45 seconds; or start the machine and allow the Hot Soup program to complete. Stop the machine.
  3. Portion equally into 8-ounce ramekins and place in the refrigerator for 3 to 4 hours until set. Top with fig jam and garnish with chopped toasted pistachios.
