Avocado Fudge Balls
Satisfy your sweet tooth while using extra avocados you have on hand. Enjoy right out of the refrigerator or freezer.
- 120 ml (½ cup) cream of coconut
- 45 ml (3 Tablespoons) maple syrup
- ¼ teaspoon vanilla essence
- 2 avocados, halved, pitted, peeled
- 115 g (⅔ cup) plain chocolate (50% cocoa)
- Place cream of coconut, maple syrup, vanilla, and avocados into the Vitamix container in the order listed and secure lid.
- Select Variable 1.
- Turn machine on and slowly increase speed to Variable 10, then to High.
- Blend for 35 to 45 seconds, using the tamper to press the ingredients into the blades.
- Spread mixture into a small, square plastic storage container and freeze until set, about 3 hours.
- Melt chocolate in a bowl in the microwave.
- Scoop chilled avocado mixture into ball shapes with a small cookie scoop.
- Dip into the melted chocolate and place on a parchment-lined pan. Return to the freezer to set.

Rated 2 out of 5 by RobertG from Could be improved I ended up making this recipe and another one that was cream cheese based. The Avocado one did not have much flavor (or sweetness of course) so it ended up being a bit bland for a dessert. Healthier than most and vegan. It was hard to get them in ball form, maybe because I froze them too much. It reminded me of mochi balls because of the lack of sweetness and bland flavor, but nice texture. I would probably recommend combining this recipe with the over-sweet cream cheese one so you would get part of the healthier and cut the sweetness. Bottom line, I think most people may not enjoy this as much as a "regular" dessert.

Rated 4 out of 5 by EVA G from different, but good! Don't tell anyone that they are made with avocado if you want them to try these! I added 4 Tablespoons of Maple syrup after reading another review that said they weren't very sweet. I really like them! Using a small bowl to heat the chocolate gave me problems in turning the balls to coat them, and the chocolate coating ended up too thick! I then tried heating the chocolate in a small stainless frying pan,over very low heat and that gave me the space to roll the balls and get them coated with the amount of chocolate I wanted.

The key is melting the chocolate correctly and coating the balls with a thin layer, otherwise you will taste the chocolate more than the avocado mixture. Definitely a healthy fats treat, and great treat for kids too!

Rated 5 out of 5 by kwhoff from Delicious I was hesitant when looking at ingredients but previous reviews made me have to try. They are so interesting and delicious. I brought to work to a function and people are raving. Mine did not look like the picture. They were actually kind of ugly. Very messy trying to "dip into the melted chocolate and place on parchment paper". Don't wear white while doing this! I think next time (and there will be a next time because they are really tasty), I will try to layer the chocolate/avocado/chocolate -- then freeze. As I'm writing this I am not sure that will work. If there are suggestions on how to make the dipping work better, please share!
