Arugula and Mint Pistou

A slight twist on the Provençal cold sauce, similar to pesto, featuring arugula and mint.

Arugala Mint Pistachio


  • 1 1/2 cups (360 ml) extra virgin olive oil
  • 4 cups (80 g) arugula
  • 2 cups (100 g) fresh mint leaves
  • ¼ teaspoon salt, optional
  • ¼ teaspoon ground black pepper


  1. Place ingredients into the Vitamix container in the order listed and secure the lid. Start the blender on its lowest speed, then quickly increase to its highest speed, using the tamper to press ingredients towards the blades. Blend for 45 seconds.
