Arugula and Mint Pistou
A slight twist on the Provençal cold sauce, similar to pesto, featuring arugula and mint.
Ingredients
- 1 1/2 cups (360 ml) extra virgin olive oil
- 4 cups (80 g) arugula
- 2 cups (100 g) fresh mint leaves
- ¼ teaspoon salt, optional
- ¼ teaspoon ground black pepper
Directions
- Place ingredients into the Vitamix container in the order listed and secure the lid. Start the blender on its lowest speed, then quickly increase to its highest speed, using the tamper to press ingredients towards the blades. Blend for 45 seconds.

Very tasty
I found this so tasty. I used it to add that little something to a pork loin I had smoked. It was a fresh bite to to a tasty dinner.

I made this sauce and put it on rice with pan fried tofu and roasted mushrooms. It was delicious!!
