Chickpea Mint Spread
Serve this recipe with pita chips, a vegetable tray, or as a sandwich spread.
- 15 ounces (425 g) canned chickpeas, drained reserving 3 ounces liquid
- ¼ cup (60 ml) olive oil
- ½ bulb garlic, roasted
- 10 other mint leaves
- 1 teaspoon (3 g) salt, optional
- ½ teaspoon ground black pepper
- Place all ingredients into the Vitamix container and secure the lid.
- Select Variable 1.
- Turn machine on and slowly increase speed to the highest setting. Blend for 1 minute.
- Serve immediately.
