Jackfruit Soup
Nothing says comfort like a steamy bowl of delicious, healthy soup full of the nutrients only jackfruit can provide. For some fun and variety, just add cooked ramen noodles or pho noodles.
Ingredients
- olive oil
- ¼ medium onion, peeled, diced
- 2 cups (270 g) jackfruit
- ½ (100 g) apple, seeded, cored
- 1 (100 g) carrot, halved
- 1½ cup (360 ml) vegetable broth
Directions
- Warm oil in a saucepan. Add onion and sauté for 5 minutes, or until tender.
- Place cooked onion, jackfruit, apple, carrot, and vegetable broth into the Vitamix container in the order listed and secure lid.
- Select Variable 1.
- Start machine, slowly increase to Variable 10, then to High.
- Blend for 6 minutes and 15 seconds, or until heavy steam escapes from the vented lid. Serve immediately.

Loved Vitamix's performance, buuut....
I wanted to try something exotic to break-in my new Vitamix. It was quick and made a smooth soup. The soup was a bit starchy. Next time I think I'll put some coconut milk in it...i have a LOT of jackfruit left.
