Real Strawberry Ice Cream
Kick this recipe up a notch by adding a banana, or sneak in courgette for added nutrition.
Ingredients
- ¾ cup (180 ml) soy milk, or milk
- ¾ cup (180 ml) coconut milk, or heavy cream
- ⅓ cup (80 ml) date syrup, or honey to taste
- ¼ teaspoon vanilla bean paste, or vanilla extract
- 1½ pound (680 g) whole frozen strawberries
Directions
- Place all ingredients into the Vitamix container in the order listed and secure the lid.
- Start the blender on its lowest speed, then quickly increase to its highest speed.
- Blend for 30-45 seconds, using the tamper to press ingredients toward the blades. After about 30 seconds, the sound of the motor should change and four mounds will form.
Notes
Freeze unused ice cream in an airtight container. When ready to enjoy, allow to soften at room temperature for 10 minutes before serving.

Delicious! Scrumptious! Perfect!
I followed this recipe but I don’t eat dairy and avoid refined sugar so I subbed coconut cream (the thick cream from the can) and almond milk equa ratios to the recipe. I used 1tsp of vanilla extract and 3.5 TBS of dark grade A maple syrup. I also used 1/2 of a frozen banana. This came out absolutely delicious! Tastes better than what you would get at an ice cream shop and the consistency is so smooth and delicious. I am going to take this recipe and try making new recipes based off of this! Delicious!

Vegan substitutes
1/2 coconut milk
1/2 coconut cream
3 Tbs maple syrup
1tsp vanilla extract
This is a great recipe. It is delicious and really simple to make. It is a keeper!

It is workable
The recipe is ok! Me personally I would use heavy whipping cream, sweetened condensed milk instead of sugar! Sweetened condensed milk is easy to make by adding a cup of sugar to two cups of whole milk and cook on stove top for about 25-40 minutes with a pinch of baking soda and a tablespoon of vanilla extract. Ot is better than eagle brand and works wonderful for all flavors of Ice cream!

Incredible
I just got my new Vitamix today...this was the first recipe we tried. I have NEVER had such good strawberry ice cream in my life. We followed the recipe exactly, except we used liquid vanilla extract in place of the paste. Yumyumyum.

I made it vegan
I substituted cashew milk for the regular milk and coconut cream for the heavy cream. I also added one frozen banana. I used no sweater as I'm trying to lose weight. It came out delicious but it might not be sweet enough for some. I can't wait to try more flavors or different fruit as it came out very well for me. I'm definitely making this again.

I followed the recipe exactly and it's perfect
My first ice cream and I happened to have all ingredients on hand. Even vanilla bean paste. The day before I washed and cut the berries in half and froze them on a baking sheet. I used shelf stable heavy whipping cream from Trader Joes because I had some.in the cupboard. Made it by weight and it's so creamy and delicious and very strawberry-yy. Not too sweet but not lacking sweetness. It's perfect.
