Welcome to our International Tour of Salads, a fascinating look at the birthplaces of some of our favorite ways to dress our greens.

First, a stop in the French Riviera city of Nice, the home of the salty and delicious Niҫoise Salad (also called Salad Niҫoise), popularized by Julia Child in the 1960s. Niҫoise means “in the style of Nice,” a nod to the oil-cured olives and tuna that are featured ingredients. Pair it with a light dressing, like our Basic Vinaigrette.

It’s hard to leave those French beaches, but we’re headed to Greece, home of the Greek salad. The version familiar to us contains lettuce, but this isn’t the case in Greece. There, tradition demands only red onion, tomatoes, kalamata olives, cucumbers, and tangy Greek feta cheese.

Then it’s on to the birthplace of Caesar Salad—not Italy, as we might expect, but Tijuana, Mexico. The creation of Chef Caesar Cardini, who left California for Mexico to dodge Prohibition laws, his original salad was anchovy-free, and he demonstrated his culinary flair by mixing the dressing right at the diner’s table.
