Blackberry Panna Cotta
Only four simple ingredients are needed for this quick-chilled dessert, which is especially refreshing on a warm summer day. Feel free to switch up the berries to whatever is in season at the time.
Ingredients
- 2 cups (480 ml) heavy cream
- ⅓ cup (65 g) granulated sugar
- 1 teaspoon powdered gelatin
- 1¾ cup (250 g) blackberries
Directions
- Place cream and sugar into a heavy bottom sauce pan. Whisk to incorporate. Bring to a boil over medium-high heat, about 5 minutes, stirring occasionally.
- Remove from heat. Whisk in powdered gelatin.
- Place blackberries and cream mixture into the Vitamix container in the order listed and secure the lid. Select the lowest setting. Start the machine, slowly increase to Variable 6, and run for 45 seconds.
- Portion equally into eight 4-ounce ramekins. Chill in the refrigerator for at least 4 hours or overnight.
Notes
This recipe combines the beautiful texture of muddled blackberries with sweetened cream. Any fresh berry can be used, but softer berries are ideal because they will mash more easily at lower speeds.

Delish with strawberries
I made a half-batch of this recipe, and it turned out great - it set well in the expected time-frame. It was fabulous with fresh local strawberries. My strawberries were fairly large (as blackberries can also be) and I found that a couple of them stuck under the disk. Although the recipe doesn't say to cut the fruit into pieces, I would recommend doing that unless your fruit of choice is quite small or very soft (e.g. raspberries)

Mixed berry panna cotta
I used frozen mixed berries and agave nectar for sweetener. I used less than it called for. Followed recipe to the letter after the slight change. One of the BEST! Worth the price of the AER Disc Container just for this ONE recipe! I am having fun! Get yers today!

Tasty, but set not right
I made this recipe exactly to the directions. It set up overnight, but the set was not as firm as it should be. It turned out more like loose pudding. I’m going to try it again and use a tablespoon of gelatin instead of a teaspoon. I looked at other recipes and they call for a tablespoon for two cups of liquid.

Vegan version
i used heavy coconut cream, less than 1/4 cup of yucan syrup, agar agar and cut up strawberries. Turned out wonderful!

Strawberry Panna Cotta
I used frozen strawberries and followed recipe with a modification of using Sugar in the Raw. I let the strawberries thaw, then squeezed them to kind of mash them up. There can be no finer desert. I am going to try canned peaches and mash them up. Should be top notch.!

Don’t blend the black berries!
The seeds crushed added a bitterness that got more distinct the longer it sat. When I make it again, and I will! I’m stirring in the berries.
It keeps very well refrigerated, a good make ahead dish for company.
