Blueberry Avocado Nice Cream
Try this creamy vegan treat that is bursting in-season blueberries to cool off this summer.
Ingredients
- ¾ cup (180 ml) coconut cream
- 1 (150 g) small frozen banana, peeled, halved
- 2 (325 g) avocado, peeled, seeded
- 2 cups (310 g) fresh blueberries
- ½ teaspoon vanilla extract
- ¼ teaspoon ground cardamom
- 2 dates, pitted, or honey to taste
Directions
- Place all ingredients into the Vitamix container in the order listed and secure the lid.
- Start the blender on its lowest speed, then quickly increase to its highest speed, using the tamper to press ingredients toward the blades. Blend for 30 to 45 seconds or until smooth and creamy.
Chef's Notes
For a more frozen consistency, add another frozen banana or replace the fresh berries with frozen berries.

LOVE IT!
I just received a Vitamix for my birthday. I wanted ice cream to be my first recipe. OMG. So easy and so "berry" good! I followed the recipe to the letter. I was excited to use blueberries from my farm. The honey was blueberry blossom from my farm as well. I tell you, I wish I could tell everyone I know to buy a Vitamix. I get it! So wanting to get back in the kitchen and create! Clean up so not even an afterthought, so very easy!

Delicious!
The person demonstrating the Vitamix at our Costco made this, so I can't say *I* have done it myself, but it looked quite easy and it didn't even take the 15 minutes the recipe says, more like 3 minutes. VERY tasty!

Flavor profile needs tweaking
Personally did not like the cardamom addition to the "nice-cream". IMO, flat flavor but that could depend on the sweetness of blueberries used. Maybe cinnamon or lemon would be help the flavor profile.
