Corn Soup
This easy soup is done in only minutes—plus you can easily change out the corn for any frozen vegetable of your choice. The possibilities are many, but the result is always the same—delicious!
Ingredients
- 1 pound (450 g) frozen corn kernels, thawed
- 3 cups (720 ml) vegetable stock
- 2 Tablespoons fresh thyme leaves
- ¼ cup (30 g) medium onion, peeled. diced
- 1 teaspoon salt, optional
- ½ teaspoon ground black pepper
Directions
- Place all ingredients into the Vitamix container in the order listed and secure the lid.
- Start the blender on its lowest speed, then increase to its highest speed
- Blend for 6 minutes, or until heavy steam escapes from the vented lid.
Chef's Notes
For thicker soup, add more corn to the blend. To remove some of the foam at the end of this blend, select Variable 3 and blend for 15 seconds. Add your favorite spice blend to the soup to create a unique flavor. Taco seasoning is a hit, and add tortilla chips, black beans, and more corn to add some texture to the soup at the end of the blend.

So simple!
This is a pretty basic recipe. I used 4 ears of fresh corn. Threw in 1/2 c cooked chicken I had in fridge. Did not add the bouillion, as I used veggie stock instead of water.
After blending for 5 minutes, added some more shredded chicken, Fritos, and another ear of fresh corn, blended on 1 for about 30 seconds,

Funny thing is that I looked this up because I wanted to know how to stop the foam at the end. Now I know :)
I love this soup. I had a left over can of sweet corn and I added one orange bell pepper. Great, easy recipe. I don’t know how I haven’t made this before. I absolutely love all the vitamix soups. I just always am sad with the foam at the end but now I just learned you have to reduce the speed to 3 for the last 15 seconds. That should be a tip that is shared more often. Thanks for the recipe!

Bought this for my son and was intrigued by the corn soup recipe in the mini cookbook that came with the Vitamix E320, had to try it, used frozen organic sweet corn (thawed of course), didn’t season TIL end, added a 3ml turmeric ,fresh ground pepper and salt to the bowl and wow creamy texture.

Simple and quick
I only have my new pro 500 for a few days and I'm loving it. So when I went online to register it I saw this corn soup recipe and had to try it out. Super tasty and simple to make. No real clean up or mess to deal with and hot enough to enjoy it right away. The only thing I would do next time is add a little corn starch to thicken it a little bit. But we enjoyed it greatly and I'm so happy that I tried it.
