Pumpkin White Chocolate Hot Cocoa
When you cozy up by a fire with a great book and this hot cocoa, you’ll have the perfect cold-weather day on your hands! Feel free to substitute dark chocolate for white if you prefer.
Ingredients
- 3 cups (720 ml) milk
- ¾ cup (200 g) pumpkin purée
- 8 ounces (125 g) white chocolate
- 1 teaspoon vanilla extract
- ¼ teaspoon ground ginger
- 1 pinch ground nutmeg
- ½ cup (25 g) mini marshmallows
Directions
- Add milk, pumpkin purée, chocolate, vanilla, ginger, and nutmeg to your Vitamix container in the order listed and secure the lid.
- Select the lowest setting or the Hot Soups program (if available). Start the machine, slowly increase to its highest speed, and blend for 5 minutes 45 seconds; or start the machine and allow the Hot Soups program to complete. Stop the machine.
- Once machine has stopped, select the lowest setting and blend for 10 to 15 seconds to reduce the amount of foam.
- To serve, pour into mugs and top with mini marshmallows!

Delightful Treat
I halved the recipe since it make 6 servicings and only my husband I were around to eat it and wasn’t sure if it would save. It was really good but came out pretty thick and I used white chocolate hot coco powerder which may not have been the right choice. Clarification on what kind of white Chocolate used would be great! I also used unsweetened vanilla almond milk. With a few tweaks it was great!!! Will be making it for a came night in a few weeks and I’m sure it will be a hit! I’m also thinking of making it thicker on purpose and putting it into a backed pie crust and freezing it for a frozen treat!!

Okay but can be improved
The current recipe results in a very thick and a little flat tasting drink. Increase the liquid by at least another cup...additional tsp of vanilla, triple the ginger, a pinch of salt and add 1/2 tsp of allspice. If no allspice add 1/4 tsp of cloves.

So yummy!
We have made this pecipe twice and it is so delicious! It’s very rich so you wouldn’t want to have it everyday but it’s a great treat! Super easy with the soup function!
