A hearty spread made with raw, roasted, or salted almonds that also works as a fruit dip. One of the major keys to blending almond butter is using roasted almonds. If roasting the almonds yourself make sure the almonds have a nice crunch to them. Sixty seconds to Almond Butter!I’ve only had my Ascent 3500i for a few days so no expert here. I took the plunge to make this after reading many reviews from broken machines to perfect almond butter. I didn’t use the oil, set the machine to 10 for 1 minute and I definitely had almond butter at the end. I thought it was slightly too stiff so added a tblspn of coconut oil and blended again for about 20 seconds to give a lovely creamy texture. Tasty too. The ONLY downside was the cleaning. I added some coconut milk, maple syrup, chocolate powder and ice and made a nice drink. After a cleaning cycle there was still almond butter under the blades. I had to get a toothbrush to get that out.

Thank you for the idea!I was reading an article on "How to choose the best almond butter" and at the bottom of that same article was a section on Homemade Almond Butter which had a link and led me to here. I decided to give it a try and was pleasantly surprised how easy it was to make and how delicious it tastes. I opted to make only half a batch in case it didn't turn out right. Therefore, I only used 2 cups of roasted almonds (I roasted myself). Initially I did not add any oil like some of the reviewers suggested. But it turned out a little dry. So, I decided to add 1 Tbsp of coconut oil instead of the 1/4 cup (or 1/8 cup since I was making half a batch) canola oil the above recipe calls for. It turned out creamy and delicious. Definitely will make again.

Didn't need the oil- so glad I made this!I was nervous about making my own almond butter, but it's so expensive to buy. I used two cups of almonds, that I toasted for 5-7 minutes. I then followed the directions and in about a minute I had almond butter. I didn't hear the loud noise people talk about. I just stopped when the consistency looked right.
After I scooped out as much as I could, I added some frozen banana and a cup of water for a delicious smoothie and tasty clean up.

So easy and Tasty!!I'm with Rosa - no oil needed. Might relate to the model. My new 5300 never chugged, so I probably blended it longer than I needed to. Another step I took from another site was, rather than scrape every bit I could, I left what didn't come out easily with a rubber spatula, added water, and made a quart of almond milk.

Low-profile machine owners read thisThe first time I tried this, all I got was a big mess. But then I read the recipe questions section of this post, and discovered that machines such as mine require AT LEAST SIX CUPS of almonds for this to work properly. I tried it again, and it worked beautifully.

Too many ingredientsI make almond butter every week and you do not need the extra calories of canola oil. The VitaMix will make the most delicious almond butter with no oil whatsoever -- the nuts have enough oil on their own.

Sound on the almondsHello, thank you for the almond butter recipe. I shall use it But!....who in their right mind would Ever use Canola oil?...it is not fit for consumption.

UnhappyI bought a refurbished S Series Vitamix, just used it for the first time to make almond butter. Incredibly disappointed! Followed directions, even made 2 batches in case I had used it wrong. The first batch shut the motor down, even though I used less that 2 cups of almonds.The almonds never emulsified or released their oils even after several minutes.
The best I got was a paste like texture. My cusinart does a great job of making almond butter and I have never had to add oil to it. I'll get that back out the cupboard and adios vitamix. I'll call on Monday to make arrangements to return it.
