Rated 5 out of 5 by Rose33 from Delicious Recipe (with a few modifications) This recipe is a great starter, a very healthy and filling meal. The only modifications I made were using 4 sprigs of dried thyme, medium onion instead of a small one, twice as much garlic, and I added some chopped fresh rosemary as I was sauteeing the onions and garlic. This gave the soup a lot of good flavor. I also steemed 2 acorn squash (which was probably more than 3 cups full) and added all of the steemed squash to the soup. This helped cut down the acidity but made the soup sweeter. Both ways yielded delicious results!

Rated 5 out of 5 by Laurajax from Outstanding soup! This soup is terrific! And it's incredibly healthy, which is rare in soups that usually use cream bases. Well done!

Rated 4 out of 5 by Katieann from Good, rich soup Good soup the is very thick and savory. Good to make in advance and take for lunches. Very filling. This soup is not sweet at all - so if you are looking for a slightly sweet soup this would not be for you. However, if you are looking for a rich savory soup, this soup will probably work.

Rated 4 out of 5 by slee2590 from Very good soup I followed the recipe exactly as written. It turned out a very good base but I felt like it needed more salt. I would add a quarter to a 3rd teaspoon of salt. I'm not sure I will make it again because cutting in preparing a fresh, hard acorn squash was quite a job.
