Broccoli Cheese Soup
This cheesy favorite is ready in just 6 minutes. Ladle over steamed broccoli pieces for added texture.
Ingredients
- 1 cup (240 ml) milk
- ½ cup (55 g) low fat cheddar cheese, shredded
- 1½ cup (135 g) broccoli, steamed
- 1 teaspoon onion, peeled, diced
- ½ bouillon cube
Directions
- Place all ingredients into the Vitamix container in the order listed and secure lid.
- Select Variable 1.
- Turn machine on and slowly increase speed to Variable 10, then to High.
- Blend for 5-6 minutes or until heavy steam escapes from the vented lid.
Notes
Serve over additional steamed broccoli pieces. (optional)

AWESOME SOUP!
This is the first soup I tried and it was absolutely delicious. I used all the ingredients according to the recipe, using only uncooked cauliflower in the soup, and increased the onion to a whole medium yellow onion-chopped. Because we like our food a little more spicy than most recipes suggest, I added extra spices - 2 cloves of garlic plus about 2 teaspoons of garlic powder, chipotle salt blend, smoked sea salt and pepper to taste, and a small amount of soy sauce. I poured the soup over steamed broccoli; however, next time I will pulse the broccoli into the soup. This soup was so easy and filling. It was a complete meal for 2 on a Monday night!

My First Vitamix Soup!
I used this as a base recipe for my first attempt at making soup in my new Vitamix. Here's my version:
12 oz can of fat free evaporated milk
1 tsp better than bouillon reduced sodium chicken flavoring dissolved in a cup of boiling water
2-3 Tbl chopped sweet onion
3 small sweet peppers
1/2 to 3/4 cup shredded sharp cheddar cheese
2/12 to 3 cups steamed cauliflower
Generous grind of black pepper
Pinch of red pepper flakes
I forgot to keep some of the cauliflower aside to add after blending, and would consider adding in some small diced potatoes as well, but the flavor and consistency were outstanding! Very pleased!

Very Tasty
An easy recipe to follow and execute. I made some slight modifications including increasing the amount of cheese to approximately 1 cup, salt, pepper, and garlic powder. Once it was fully blended and heated I carefully removed the lid plug to taste and adjust seasoning. After blending for about another 30-40 secs I removed the lid plug and added about another 1/2 cups of small steamed broccoli pieces. I blended on Variable 1 for about another 10-15 secs. I did this last step because I like some small broccoli pieces in my soup. I served it with some shredded cheese and Grissol Bagguetes Bites. Very tasty indeed.

AMAZING
I fixed this almost like the recipe, but I don't have anything diet in the kitchen. So it was 1 cup of raw whole milk, 1/2 cup of shredded co-jack cheese. I steamed 2 cups of Broccoli/Cauliflower mix. I sautéed one onion slice (diced), 6 grape tomatoes slices and a little garlic. I used 1 1/2 cups of the veggies and the sautéed onion mixture in the blender to start with and then the last 1/2 cup of veggies were added and blended to make the soup chunky. Serving it with a little extra grated cheese on top. YUMMY!!!

Over powering
I made this for my husband &I to have for a healthy lunch at work. First off, the broccoli taste was so over whelming, neither of us could tolerate it. You couldn't taste the cheese or anything else that was in it. I didn't have any other option for lunch available, so I added some salt and a ton of saltine crackers just so I had something to eat.
The texture of it was the second thing that turned us both off. If not eaten immediately, it separates to two very distinct layers. And once separated, they really don't mix well back together.
Unless I tweak the recipe and eat it immediately, I don't think I will make this again.

A great base to build on!
I used this recipe, then added another cup of steamed broccoli and about 6 cherry tomatoes, and rough chopped them (setting of 2, pulse 3-4 times) to make the soup chunky. I held back a little bit of the cheese from the recipe to sprinkle on as a garnish, added some broken up tortilla chips and a teaspoon of salsa to each bowl. Dee-licious!

Amazing soup with a few adjustments
I made this soup tonight and it came out great. I sautéed some tomatoes and garlic in olive oil and added that and a little more broccoli at the end and then just used pulse 4 or 5 times to give it some added thickness and it turned out really great! Highly recommend this recipe.

Broccoli Not My Favorite
I am not crazy about broccoli. We buy the big broccoli floret bag at Costco, my wife loves broccoli. I was looking for ways to get rid of the broccoli when I came upon this recipe. The soup is delicious. I gave 4 stars because I made a couple changes to match our taste. First I steamed a little over 2 cups of broccoli for 10 minutes. Add 1 1/4 cup of milk to the Vitamix, 1/4 tsp of salt, 1/4 tsp of garlic powder, 1/4 tsp of cayenne pepper, the diced sliced onion, 3/4 cup of sharp cheddar cheese, then the broccoli. Blend 6 minutes in the Vitamix, and enjoy. We have some Hawaiian Sweet Rolls with the soup, for an easy delicious hot lunch on these cold winter afternoons.
