Carrot Ginger Purée
Carrots balance out the ginger and spice blend in this creamy purée, perfect for pairing with turkey, duck or turducken.
Ingredients
- 2 pounds (908 g) carrot
- ½ teaspoon fresh ginger root, peeled
- 2 teaspoons garam masala
- 4 cloves garlic cloves
- 1 (240 g) onion
- 2 Tablespoons (30 ml) extra virgin olive oil, optional
Directions
- Preheat oven to 400°F. In a large bowl, toss all ingredients together with extra virgin olive oil.
- Place ingredients on a pan and roast for 40 minutes or until tender.
- Place ingredients into the Vitamix container and secure lid.
- Start the blender on its lowest speed, then quickly increase to its highest speed.
- Blend for 45 seconds, using the tamper to push ingredients into the blades.
Notes
Garam masala is an indian spice blend that gives this dish a little extra flavor. This is also a quick and easy recipe that you can do ahead of time and place in an oven safe dish and reheat easily.

Doesn't work
The direction are vague 1st off. "Combine all ingredients and spread out on a roasting pan." It does not say to oil the ingredients but I did bc dry roasting doesn't seem like a good Idea, not at 400º for 40 min. Afterwards, there's no liquid. All the ingredients are too small a volume. I have the most advanced Vitamix series as well. I'm kind of shocked such an untested recipe is even on the site. This is a blender not a food processor. I ended up adding 8 oz water to get everything to blend smooth.

I liked it!
knowing I would be the only one to eat this I cut the ingredients by 1/4. I also added a red pepper and 1/4 cup water instead of the oil. I put everything in my instant pot on pressure cook high for 5 mins. Then poured it all in the Vitamix and blend until soup. I did add a tablespoon nut milk to thin it and you could add more if you like. I topped it with a sprinkle of smoked paprika and pine nuts. Only thing I would change next time is leave out the ginger, had plenty of flavor without it.
