Citrus Carrot Juice
Pineapple chunks and a lemon slice add a citrus zing to this refreshing carrot juice.
Ingredients
- 1 cup (240 ml) water
- 6 (600 g) slices of pineapple, peeled, with core
- 4 (220 g) medium carrots, washed, halved
- 2 slices lemon, with peel, ΒΌ" slices
- 2 cups (270 g) ice cubes
Directions
- Place all ingredients into the Vitamix container in the order listed and secure the lid.
- Start the blender on its lowest speed, then quickly increase to its highest speed. Blend for 1 minute or until desired consistency is achieved, using the tamper to press ingredients toward the blades.
Notes
Leaving the core on your pineapple when blending is a great way to up your fiber intake and reduce waste. Try blending carrots with the fronds on as well for even more nutritional benefits!

Made this healthy and refreshing combo with: Changing the water to fresh pineapple juice, and instead of lemon peel, added orange peel (I had no lemons). It was soooo refreshing! Would be a good nutritional drink for breakfast, lunch, dinner, or snack time.

Absolutely satisfying and delicious
The sweetness from the carrots and the slight tartness from the pineapple is a wonderful combination. Added a pinch of pink salt to enhance the flavors. Very filling.

Tasty
I, like many, tweaked recipe. I used pineapple juice 100% w fiber instead of water about a cup since I skipped whole pineapple, 4 kumquats instead of lemon and kept the tops on the carrots, tomorrow I may not elect to use those, perhaps a bit bitter but wanted the nutrition bonus hit.
