Creamy Celery Soup
This recipe uses the entire celery stalk, leaves and all, for a more intense celery flavor.
Ingredients
- 1½ cup (360 ml) vegetable broth
- ½ (65 g) medium onion, halved
- 1 pound (455 g) celery, diced
- ⅓ cup (75 g) parsnip, diced
- 1 garlic clove
- salt and pepper, to taste
- ¼ cup (60 ml) heavy cream
Directions
- Place all ingredients, except the cream, into the Vitamix container in the order listed and secure lid.
- Select Variable 1.
- Turn machine on and slowly increase speed to Variable 10, then to High.
- Blend for 6 minutes or until hot. Reduce to Variable 4; remove lid plug.
- Add cream through the lid plug opening. Blend for 10 seconds.
- Serve immediately.

Love!
Very easy and tasty. I added an extra clove of garlic making it a total of two, a little time and oregano. When I poured it into the bowl I topped it with a little sour cream and a smoky jalapeño hot sauce. Very delicious! It does not taste like grass as in the other review. Not at all this is a very healthy and refreshing soup

Tasty & Easy
I was drawn to the recipe because of its simplicity. I wasn't disappointed. The soup is super easy to make, tasty, just rich enough, and has a delightfully earthy flavor that is balanced out by the addition of heavy cream. A winner, especially when you're short on time.

I first tasted at a Vitamix Demo
I finally got my Vitamix that I had wanted for YEARS! I had been to a Vitamix Demo and could not afford to buy at the time but tasted this lovely soup Creamy Celery Soup and had dreamed about it forever...So glad to have found the recipe...I have the 48 oz Vitamix and wondering if I should divide the amount of ingredients in half to keep it from running over?

This is Great!
Delicious soup, but I never use raw onion in the Vitamix, gives it a strong, unpleasant taste. Saute the onions with the celery until medium soft then put in Vitamix. Very good.

Good with alterations
Ok. Made this after eating complete JUNK for days surrounding Christmas. Needed something healthy, but limited ingredients.
Should have trusted my culinary instincts and sautéed the onion and garlic first!! My mouth is still on fire! Will have onion breath for DAYS.
Second, I used leftover mashed potato instead of parsnip (I think that worked out fine), and chicken stock because I didn’t have veggie stock. Also subbed evaporated milk for the cream because I had some to use up. I threw in the few sad leftover roasted Brussels sprouts from Christmas dinner also.
My celery hating family thought it was OK, but the onion/garlic was overwhelming. We all added some cheese, but it didn’t help much. We ate it, but all agreed that the raw onion/garlic was a bad idea. If I made this again, I will sauté them first.

Good, but note....
Like every recipe, read the WHOLE THING first before starting. Note that one of the ingredients, halfway down, is COOKED potatoes, so you may have to start that first if you don't have leftover potatoes.
I don't know if there are different kinds of celery, but "sautee until softened" wasn't happening. If anything it got crunchier. I put some of the potato cooking water into the saute pan and simmered it to soften it up.
It came out pretty good. I don't know if I will use the garlic next time, the celery flavor is subtle and may have been overpowered.
I don't know how the person below called this "too salty".... the only salt is 1/4 tsp "optional". Unless his potatoes were really salty or he used commercial vegetable base that was salty.... but the first rule for every cook is to taste the recipe as you go??

Terrible
Followed every step of the recipe.
Soup was bitter and off tasting.
Had to throw it out.
