Fresh Tomato Sauce
The Vitamix chops and purees fresh tomatoes and herbs into a classic Italian sauce.
Ingredients
- 6 medium (700 g) roma tomatoes
- ½ small (60 g) small onion, peeled
- ½ small (40 g) carrot
- 2 Tablespoons tomato paste
- 1 garlic clove
- ½ teaspoon dried basil
- ½ teaspoon dried oregano
- salt, to taste
Directions
- Place all ingredients into the Vitamix container in the order listed and secure the lid.
- Start the blender on its lowest speed, then quickly increase to its highest speed.
- Blend for 1 minute, using the tamper to press the ingredients toward the blades.
- Pour into saucepan and simmer for 35 to 40 minutes or until desired consistency is reached.

So great!
Used 5 Roma tomatoes and 1 shallot due to using what I had in the house. Turned out excellent. I honestly couldn't believe how easy it was

Good base recipe
I signed up for a farm share this year and have been receiving tons of different types of tomatoes. This has been a good starting place for processing tomatoes quickly without a lot of tedious seeding and peeling. I find that it’s better with a bit more tomato paste and seasonings. Because I’ve been using heirloom tomatoes and lots of cherry tomatoes I am simmering the sauce for much longer to thicken it. I’ve cooked it as is in a chicken parmigiana recipe and lasagna. Have frozen some. Today I’m cooking it down longer for pizza sauce. Last week I added the base sauce to sautéed onions and carrots, ground lamb, fresh rosemary, thyme and large rigatoni for a lamb ragu. My husband raved about it.

Great basic sauce
Tried this for dinner tonight. The recipe makes a great foundation for whatever your tastes may be. I like a basic sauce that I can tweak to both my kids and husbands tastes.

Great 10min Sauce!
Love this! Added an extra tablespoon of tomato paste and 1T olive oil. Blended for 7mins on level 10. No simmering. Just scooped it right on top of the pasta. Awesome!

Fantastic Sauce!
This was a super easy sauce and tastes so fresh! I didn't have Roma tomatoes on hand, so used regular tomatoes straight from the garden. I had to simmer it a bit longer to cook off the extra water from the regular tomatoes. Poured it over whole wheat angel hair spaghetti and had a delicious dinner! Love my Vitamix!

Great base recipe
This was my first time attempting to make sauce from fresh tomatoes. So I was so happy when I found this recipe on the Vitamix site! I did add an extra dash of this and that to season to taste but this was a great 1st attempt!

Not a real pasta sauce
I tried this recipe because I didn't want to heat up the house making my traditional roasted tomato sauce. Big mistake. In the time it took me to cook the sauce down to a decent thickness, I could have made my roasted sauce. Even then, the texture was grainy. The flavor is similar to unseasoned tomato soup. Even after I sauted some onions and garlic, added red pepper flakes and balsamic vinegar, the flavor was just barely passable as pasta sauce. Do yourself a favor and find a traditional recipe.
