Frozen Irish Coffee
A delicious frozen coffee treat.
- ½ cup (120 ml) soy milk, or milk alternative
- 12 (75 g) dates, pitted
- 4 fresh mint leaves
- 1 1/2 cups (360 ml) coffee, chilled
- 3 cups (380 g) ice cubes
- Place all ingredients into the Vitamix container in the order listed and secure lid.
- Start the blender on its lowest speed and quickly increase to its highest speed.
- Blend for 30 seconds or until desired consistency is reached. Serve immediately.
To make this an alcoholic version, add 1 ounce (30ml) of both whisky and Irish cream liqueur.

I actually added a little amaretto and chocolate liqueur to make it more like Spanish coffee - you could add a variety of extras to tweek it to your liking! I love my new Vitamix ... I find new ways to use it every day!!!

The original recipe was far to sweet for my liking and so on my second attempt I cut the sugar significantly, only adding 1 Tbsp. I also left out the Bailey's and simply doubled the whiskey. This allowed the flavor of the coffee to really come through and not be overpowered by sweetness.

It really is an excellent appliance and I highly recommend it.
