Place chicken broth, wine, onion, celery, apples, potatoes, thyme, nutmeg, pepper, and salt into the Vitamix container in the order listed and secure lid.
Select Hot Soups program or Variable speed 1.
Start the machine slowly increase to its highest speed and blend for 5:45 or allow machine to complete programmed Hot Soups program.
Once you have turned off the machine or the Hot Soups program has come to a stop, Select Variable 1.
Start the machine and slowly increase speed to Variable 6 and remove the lid plug.
Drop in cheese through the lid plug opening. Blend an additional 10 seconds.
Notes
Garnish with sour cream and diced apples. This recipe can be reduced by half and made in smaller containers.
Soup may vary in color depending on the types of apples and cheese that you use. Season soups to your liking a little salt and pepper can go along way or spice it up with a little jalapeno!
Potatoe should be baked, veggies are raw. By cooking all ingredients before hand you will get a sweeter soup.
This soup is an apple forward soup with rich sweetness for a heartier flavor use 1 apple and then season to taste at the end with more spices, herbs and cheese to make it to your liking.

Superb Comfort SoupFirst, a few minor tweaks. I sautéed the apple, celery, and onions in a little oil, then deglazed the pan with the wine (I only had extra-dry sherry on hand--it's okay as a substitute). I also substituted poultry seasoning for the thyme because thyme is its principal ingredient, plus it was what I had on hand. After Step 4, I poured the soup base into a heated container, THEN added the grated cheese--easier cleanup. The soup was delicious; however, I think one Granny will be tastier, and 1 ½ potatoes while blending will result in a texture more to my preference (a bit thinner), with the other ½ pulsed in at the end to add some "chunk." Yukon Golds are a good choice because they're very creamy and the skins, if you use them, won't discolor the soup.
I noticed that a "plug" formed at the top of the container while the contents blended, so I used the tamper a few times for a perfect blend.

Apple is prominentHaving read several of the reviews about the apple overtaking the flavor, I used two VERY small, rather tart apples from a tree in my own yard... I was surprised how much of the flavor, even with the cheese, was apple based. Don't get me wrong, I love apples with cheese, but with addition of the strong bitterness of the 'raw' onion, it was not that same flavor profile. I ended up adding about 12 small carrots, some ginger for heat, and some more cheese before I was satisfied with the overall taste. If I used this recipe again, I would saute the onion, or omit it all together. I did love the texture!

Rich & Dynamic FlavorDelish! Made it for the first time and loved it. Second time, I had no granny smith apples so I substituted a sweeter variety. DO NOT make that mistake. It was waaaay too sweet. Oops.

This is a favorite of oursWe made it for our families and both had seconds and one hates soup. It was nice to know we were giving a healthier option to our families. It is one we make once a week. We used a Gala apple it's what we had on hand. I do like the idea of adding a half of a potato at the end with the pulse. One of our favorites.

Apples are a NOFollowed the recipe exactly. The taste of this soup is so strange as it has just as many Granny Smith apples as potatoes. I would throw out the white wine and replace two potatoes with the two apples.
