Pineapple Freeze
This vegan pineapple "ice cream" makes it easy to enjoy the flavors you love.
Ingredients
- 1½ pound (680 g) frozen pineapple, chunks
- 1½ cup (360 ml) soft tofu
- 2 teaspoons lime juice
Directions
- Place all ingredients into the Vitamix container in the order listed and secure the lid.
- Start the blender on its lowest speed, then quickly increase to its highest speed.
- Blend for 30 - 45 seconds or until desired consistency is reached, using the tamper to push ingredients towards the blades. Serve immediately.
Notes
Optionally, you can add in 1 frozen, sliced banana to create an even sweeter tropical-style freeze.

So Delicious!
This is just the right amount to help my sweet craving. I don't eat many things with sugar, but have been craving sweet things since this whole quarantine situation. And since we can't get out like we used to, I keep me some frozen pineapples in the freezer for occasions such as this. What a wonderful treat!

This was super easy to make and tasted good. I think it would have tasted better with the addition of a frozen banana and maybe even more pineapple. I'll try that next time. I threw some unsweetened coconut flakes on the top once it was in the bowl and that was a nice extra.
