Pineapple Salsa
Pineapple adds a burst of color and flavor to this salsa. You can serve it hot or mild with blue corn chips, or as a topping on grilled fish.
Ingredients
- 2 Tablespoons (30 ml) extra virgin olive oil, optional
- ½ pineapple, peeled, cubed
- ½ (65 g) medium onion, halved
- ½ red bell pepper, stemmed, seeded, diced
- 2 Tablespoons fresh cilantro leaves, chopped
- ½ lime, peeled, halved
- ½ teaspoon salt, optional
- ¼ jalapeño
Directions
- Place all ingredients into the Vitamix container in the order listed and secure lid.
- Select Variable 1.
- Turn machine on and slowly increase speed to Variable 4.
- Blend for 15-20 seconds, using the tamper to press the ingredients into the blades.
Notes
Remove seeds and membrane of the jalapeño for a milder salsa. You may also substitute fresh mint for fresh cilantro.

Excellent Flavor
Very nice alternative to the red/green salsas we are all used to. You can taste all the ingredients in every bite.

Pineapple salsa
Followed directions, does not come out chunky. Next time, I will use the pulse switch to get chunky salsa. Overall flavor is great.
