Pumpkin Latté
With canned pumpkin, white chocolate chips, and holiday spices, this creamy, full-flavored indulgence is a luxurious dessert when entertaining a crowd or enjoying a quiet evening for two. Top with whipped cream and a dusting of nutmeg.
Ingredients
- 1 cup (240 ml) milk, hot
- ¼ cup (60 ml) double strength coffee, hot
- ¼ cup (60 g) pumpkin
- 1 Tablespoon white chocolate chips
- ¼ cup (60 g) granulated sugar
- ¼ teaspoon ground cinnamon
- ¼ teaspoon ground nutmeg
Directions
- Place all ingredients into the Vitamix container in the order listed and secure lid.
- Select Variable 1.
- Turn machine on and slowly increase speed to Variable 10, then to High.
- Blend for 35-45 seconds or until desired consistency is reached.

Delicious on a cold Fall morning
I think I over frothed it doing it for 30 seconds on high, maybe 15-20 would be better. Other than that, very tasty. Didn't even realize I could use the vitamix to froth milk. Might be trying many more coffee drinks in the future.

Made with soy milk, needed some extra sweetness
Very good and like the other reviewer said, super frothy. Mine needed some extra sweetness when finished, though, had to add a bit more sugar so that it wasn't leaning toward bitter with the coffee and spices.

Weak
I doubled the recipe, but otherwise followed it exactly. When it was "done" it tasted like spices in milk. I more than doubled the coffee and pumpkin, added a cup of white chocolate chips, and a tablespoon of sugar. Topped with whip cream which (once mixed in) made for a decent drink. If you like weak drinks, I suppose the recipe is alright as is. If you like something stronger you could start by mixing everything except the milk and adding it in slowly. It might not need anything else if you do it that way, but at least if it does and you're adding slowly you won't end up with so much extra from doctoring the full amount. (I planned on making 4 cups and ended up with 12.)

Great and easy to make
I got my Vitamix for Christmas and I've been using it every day! I usually have coffee in the mornings but I decided that since I had all the ingredients to make this, I would. First of all I didn't have high expectations for the "latte" aspect of this because I don't drink whole milk or soy milk but rather almond milk so I didn't think it would "froth" that well to begin with, I was okay with that though. I upped the coffee levels to about 13oz of coffee but kept everything else the same.
I think that next time I'm going to go with 1/8 teaspoon on the spices because they are on the "strong" side for a drink, this wasn't called the Pumpkin SPICE latte. I will also up the pumpkin level next time so I can taste that more than the spices. You will be happy to hear that the almond milk DOES froth and my latte looked like any other latte! I blended it for the recommended 45-50 seconds and was pleasantly surprised when there was froth separation.
All in all a great drink for a cold snowy morning and a great non-heavy,pre-gym, breakfast! Mine came to about 60 calories with no chocolate chips (I only have SF chocolate chips) and around 130 with the chocolate chips :)
