Roasted Red Pepper Hummus
Chef Steve Schimoler created this spin on classic hummus with the addition of sweet roasted red pepper for flavor and color.
Ingredients
- 1 cup (170 g) roasted red pepper
- ½ cup (120 ml) water
- 2 Tablespoons extra virgin olive oil, optional
- ½ cup (70 g) sesame seeds, toasted
- 1 lemon, peeled
- 2 small garlic cloves, peeled
- 1 teaspoon hot sauce, optional
- 3 cups (450 g) chickpeas, canned, drained
- 1 teaspoon cumin seeds, or ground cumin
- 1 teaspoon salt, optional
- ½ teaspoon ground black pepper
Directions
- With a peeler or paring knife, remove the peel and white pith from the lemon, leaving just the flesh. Place all ingredients into the Vitamix container in the order listed and secure the lid.
- Start the blender on its lowest speed, then quickly increase to its highest speed.
- Blend for 1 minute, using the tamper to press ingredients toward the blades.

Yum with some spice needed!
This is a great base recipe! For those who like a mild hummus, it's perfect. I love a little heat and spice in my hummus - so I added some jalapeno slices and juice from that jar (fresh would be even better, but I didn't have it!). After making, I topped with a bit of olive oil and a dollop of fresh chili sauce - made it look beautiful (just like store bought!) and the extra heat was very nice.

Nothing added (but a little mesquite smoke)
Made this recipe exactly as published with the exception of using fresh garbanzo beans instead of canned and I grilled the red peppers and garlic over mesquite coals. AWESOME!!

The best roasted red pepper hummus ever
I was surprised and how epic this was! I left out the oil, cumin and black pepper and added about 8 jalapeno rings and a generous pinch of cayenne pepper. The creamiest, most delicious hummus ever. But I would like to state I do not like having to post my gender and age on your site. There is no reason why you must have this information.

Outstanding Flavor!
The recipe turned out very tasty with an exceptionally smooth texture and perfect thickness. I made the Tahini ingredient earlier by roasting unhulled raw sesame seeds and processing them to a silky-smooth consistency in my Vitamix. I like the that the recipe included gram weight for the Chick Peas; otherwise, using only 3 cups would have resulted in the batch being too thin. For my taste, next time I will add a little more lemon juice and roast the garlic.

Good consistency... a little bland
For this recipe, I roasted my own pepper and followed the recipe as directed. I'm not a huge cumin fan, so I think I would have preferred the recipe if I had omitted this spice. I also found it needed extra salt. I believe the next time I will try using roasted, jarred red peppers.. perhaps they would add more flavor.
