Snickerdoodles
These timeless sugar cookies are known by their sugar and cinnamon sprinkle, and are simple enough for young bakers to assist.
Ingredients
- 2 large eggs
- ½ cup (120 ml) honey
- 1 cup (175 g) margarine
- 2 Tablespoons granulated sugar
- ¾ cup (95 g) all-purpose flour
- 2 cups (240 g) whole wheat flour
- 2 teaspoons cream of tartar
- 2 teaspoons baking soda
- ¼ teaspoon salt, optional
- 1 Tablespoon granulated sugar
- 2 teaspoons ground cinnamon
Directions
- Preheat oven to 375°F (190°C).
- Place egg, honey, margarine and 2 Tablespoons sugar into the Vitamix container in the order listed and secure lid.
- Select Variable 1.
- Turn machine on and slowly increase to the highest speed.
- Blend for 30 seconds.
- In a large mixing bowl, combine the flours, baking powder, baking soda and salt.
- Stir together the liquid from the Vitamix container into the dry ingredients in the mixing bowl. Let batter sit, refrigerated, for 30 minutes.
- In a small bowl, combine the 2 Tablespoons sugar and ground cinnamon.
- Using a #40 scoop, scoop the dough and roll into a ball. Roll the ball into the bowl with the ground cinnamon and sugar until coated.
- Place on a baking sheet, about 2-inches (5-cm) apart, and bake for 8 minutes.
Chef's Notes
If dough is still sticky after chilling for 1 hour, chill an extra ½ hour.

Recipe mistake sent to Vitamix
Instead of four “reviews” complaining about the same mistake - why didn’t someone before me write to vitamix letting them know of the recipe error? Apparently they don’t seem to understand what a review is.
I received a kind reply with the missing ingredients and notification that they would fix the recipe.
Honey = 4 ounces
Salt = ¼ teaspoon

Snickerdoodle mistakes
Have you noticed that salt and honey are called for in the directions, but are not listed on the ingredients list? Skip this recipe for sure! I expected more from Vitamix!

Vitamix will still need to update the recipe
The woman before me inquired of Vitamix regarding missing ingredient in the ingredient list. I am still wondering where the other 14 Tablespoons of sugar go? Until I hear back from Vitamix, I will be putting a cup of sugar in with the dry ingredients since that is where the bulk of the sugar goes in all my other recipes. The extra 2 Tablespoons will go in with the cinnamon to roll the cookie dough. This is the first recipe that calls for honey and am hoping that it won't make the cookies too sweet. Lately, I have been using more honey in cooking and am liking it. We should be hearing from Vitamix on this recipe update. I will let you know if my assumptions work since I'm baking away today. Have wonderful holidays.

A mistake?
Ingredients list 1 cup + 2 T sugar, but in the directions it calls for the 2 T to be combined with the egg, honey (?) and butter and nowhere is 1 cup of sugar used. Very poor proof reading!

I'm confused???
So... salt & honey? They are called for in the instructions, but quantities are not listed in the ingredients... I don't think this recipe is correct so I am skipping it. I was so looking forward to some good snickerdoodles too... )-:

Too much baking soda!!! Reduce to 1 tsp!
Reduce baking soda to 1 tsp. 2 Tsp is way to much, that is what that slightly off flavor is.
Otherwise, if you cream honey and butter well, then add the egg, vanilla, salt, then flour and baking soda, the texture of the cookies is perfect!
