Rated 2 out of 5 by BigM from Too minty! This soup has interesting ingredients and tastes appropriate to springtime. However, the amount of mint called for in this recipe completely overpowered all the other tastes. When I made this I only use a small stalk of mint. However, I would recommend limiting to 1-2 leaves and just use the mint as a condiment to top the soup.

Rated 2 out of 5 by Sealife from Haven’t made it yet What does “5 zucchini” mean? Zucchini comes in multiple sizes. Amount in cups would be helpful before I try this recipe. Txs

Rated 5 out of 5 by WorldTraveler from It’s all about your definition of “bunch” This is delicious - but make sure you understand how much is in a “bunch” before throwing handfuls of mint into your blender and giving it a 2 star review.
