Blueberry Maple Syrup
This homemade syrup offers a healthier, preservative-free alternative using fresh berries with natural flavor and antioxidants for a cost-effective, versatile topping for breakfasts, desserts, or drinks.
Ingredients
- ½ cup (120 ml) water
- ⅔ cup (160 ml) maple syrup
- 1 (60 g) lemon, zested and juiced
- 4 cups (600 g) fresh blueberries
Directions
- Place ingredients in a deep saucepan over high heat. Bring to a boil and cook for 2 - 3 minutes, stirring constantly until berries have begun to burst. Turn off heat. Allow to cool slightly before handling.
- Carefully pour cooked berries into the Vitamix container and secure the lid.
- Run the Smoothie Program or start the blender on its lowest speed, then quickly increase to its highest speed. Blend for 40-50 seconds, or until completely smooth.
- Serve warm. Store leftovers in an airtight container in the refrigerator for up to 1 week, or freeze for up to 6 months.
Notes
Frozen blueberries can be substituted for fresh blueberries, it will just take a bit longer for the berries to cook down. Try this syrup with our Waffles and fresh Whipped Cream for a real breakfast treat.
