Lobster Bisque

Lobster shells, aromatic vegetables, tomato paste, and white wine blend into a smooth, richly flavored bisque.

  1. For the Soup: Heat a large soup pot over medium high heat, add the butter, onions, carrots and celery. Sweat for 10 minutes or until translucent. Add the garlic, thyme, bay leaf and tomato paste cook another 2-3 minutes stirring the tomato paste into the vegetable mixture.
  2. Sprinkle the flour over the vegetable mixture and stir constantly. This is a step to cook the flour and give it a nice nutty flavor. Add the lobster shells to the mixture and deglaze with the white wine. Stir in and you will have a thick paste. Add the stock and stir to combine. Bring to a boil and then reduce the heat and allow to simmer for 30 minutes.
  3. In 2 batches carefully fill the Vitamix Container and secure the lid. Run the Dips & Spreads Program or start the blender on its lowest speed, then quickly increase to its highest speed. Blend for 60 seconds, using the tamper to push ingredients toward the blades
  4. Strain through a chinois (fine mesh strainer or cheese cloth) pressing it through with a ladle. Repeat with the second batch.
  5. Pour the strained soup back into the pot and add the lobster meat, sherry vinegar, salt and pepper to the soup and warm.

Notes

Garnish with diced chives, if desired.
