Sweet Peanut Butter Filling
Make your own chocolate peanut butter cups at home, or pair with jelly for PB&J-inspired treats!
Ingredients
- 3 cups (425 g) roasted peanuts
- 1 Tablespoons unsalted butter, softened, optional
- 6 Tablespoons (45 g) powdered sugar
- ½ teaspoon kosher salt, optional
Directions
- Place all ingredients into the Vitamix container in the order listed and secure the lid.
- Run the Nut Butter Program or start the blender on its lowest speed, then quickly increase to its highest speed. Blend for 60 seconds, or until your desired consistency is reached. Use the tamper to push ingredients toward the blades.
- To fill chocolate: Melt good quality chocolate over a double boiler. Spoon or brush the melted chocolate over chocolate molds and allow the excess to drip off. Let this layer chill and set. Once set, spoon the filling into each mold, smoothing it over evenly with a small spatula. Spoon more melted chocolate over the filling and smooth over. Scrape with a bench scraper to level it and allow to set completely. Once set, carefully unmold the filled chocolates and enjoy!
Notes
For a crunchy peanut butter, blend for a shorter amount of time. For a silky smooth peanut butter, blend for at least 1 full minute. Leftover filling can be kept refrigerated in an airtight container for up to 3 weeks, or frozen for up to 3 months. We love pairing this filling with any fruit jam to create a PB&J flavor. Get creative and try this filling in other recipes like cakes, cookies, tarts, pies, donuts, cheesecake, ice cream, hot chocolate, or even waffles/crepes!
