Vegan Chocolate Winter Spice Pudding
Creating puddings in the Vitamix is so simple, you will never use a stove top again.
Ingredients
- For the Pudding
- 2 cups (660 ml) soy milk [or almond milk], lukewarm
- 10 dates, pitted
- ¼ cup (25 g) cocoa powder
- 2 Tablespoons (15 g) Winter Spice Seasoning
- 0 (1.84 g) iota carrageenan
- 0 (0.28 g) kappa carrageenan
- To Serve
- ⅔ cup (190 ml) Fig Jam
- 1 cup Coconut Whipped Topping
- pistachios, lightly toasted and chopped
Directions
- Place ingredients into the Vitamix container in the order listed. Secure the lid.
- Run the Hot Soup Program or start the blender on its lowest speed, then quickly increase to its highest speed. Blend for 7 minutes, 30 seconds.
- Portion equally into 8 ounce ramekins and place in the refrigerator for 3–4 hours until set.
- Top with fig jam, coconut whip and garnish with chopped toasted pistachios.
Notes
Using the Vitamix to heat the pudding activates the gelatin and creates a light creamy textured pudding. Carrageenan is a plant based thickener which works well in this recipe.
