Sorbet aux petits fruits avec épices variées
La noix de muscade, la cannelle, le piment de Jamaïque et la menthe fraîche complètent une variété de baies dans ce sorbet sucré et rafraîchissant.
Ingrédients
- 180 ml (3/4 tasse) d'eau froide
- 5 g (1 morceau) de racine de gingembre frais, en tranches de 1 cm (1/4 po)
- 75 g (5) de dattes Medjool dénoyautées ou miel au goût
- 1 tasse (125 g) de fraises surgelées
- 125 g (1 tasse) de bleuets surgelés
- 120 g (1 tasse) de mûres surgelées
- 1 tasse (90 g) de framboises congelées
- 2 tasses (280 g) de cerises noires douces surgelées, dénoyautées
- 5 g (2 cuillères à soupe) de feuilles de menthe
- 0,5 ml (⅛ c. à thé) de clou de girofle moulu
- 0,5 ml (⅛ c. à thé) de piment de la Jamaïque moulu
- ¼ cuillère à thé de noix de muscade moulue
- 2,5 ml (½ cuillère à thé) de cannelle moulue
- 5 ml (1 c. à thé) d'extrait de vanille
- 260 g (2 tasses) de cubes de glace
Instructions
- Mettre le gingembre, l'eau et les dattes dans le récipient Vitamix, puis verrouiller le couvercle. Démarrer le mélangeur à sa vitesse la plus basse, puis augmenter rapidement la vitesse jusqu'au maximum. Mélanger pendant 15 à 20 secondes ou jusqu'à ce que les dattes et le gingembre soient hachés finement. Arrêter l'appareil, puis retirer le couvercle.
- Ajouter les baies, la menthe, le clou de girofle, le piment de la Jamaïque, la noix de muscade, la cannelle et la vanille dans le contenant avec le mélange de gingembre, puis verrouiller le couvercle.
- Démarrer le mélangeur à sa vitesse la plus basse, puis augmenter rapidement la vitesse jusqu'au maximum. Mélanger pendant 45 à 60 secondes, en utilisant le pilon pour pousser les ingrédients vers les lames.
- Après environ 30-60 secondes, le son du moteur changera et quatre pics devraient se former dans le mélange. Arrêter l'appareil. Attention de ne pas trop mélanger, sinon la préparation fondra. Servir immédiatement.

Perfect Low Fat Dessert!
I made this today and it was fabulous and easy to make. Afterwards I experimented a little more. Use more spice for a more seasonal taste otherwise go east there. You can also adjust your berry mix and major on the ones you love the most. Also, the less blackberries and blueberries you use the less darkened and more red the sorbet will be.
Add a bit more sweetener if you have a sweet tooth, otherwise the taste is rich, healthy and perfect. If you want smooth sorbet with some chunks of berries, add a few more right after your four mounds and blend about 20 seconds longer. Have fun.

Needs a little tweaking to your taste
This recipe sounded fantastic and I think it can be if tweaked to your tastes. I found the quantity of ginger root and mint to be fairly overwhelming. Ginger root and mint can vary in potency so I would recommend adding it to taste as you go. Using the stock recipe I didn't taste much of the flavor of the berries. Texture and color were excellent. It needs at least 1 hour and preferably 2 to set up the portioned scoops.

Great dessert but unclear re addition of ice cubes
Recipe in Step 5 calls for addition of 'ice cubes' but doesn't state an amount. The same recipe in my Vitamix recipe book does not call for addition of ice cubes. Made it according to the recipe book and turned out fine. Used less ginger (1/2") and fresh from the garden mint as per other comments. According to final taste, could have used more ginger but the amount of mint (5 g) was about right.

Great taste
First time using the Vitamix and wasn't sure exactly how it should look and time wise, but it came out perfect. It has mix of wonderful taste from ginger to mint and all the other spices. Very good!
